Italian Meat Loaf  

Sometimes I add spinach to this very moist meat loaf packed with flavor. It will turn anyone into a meat loaf fan.

 









Ingredients

2 pounds ground sirloin

1 egg white

1 cup tomato juice

Salt and pepper to taste

1/2 teaspoon minced garlic

1 teaspoon dried oregano leaves

1 teaspoon dried basil leaves

1 onion, chopped

4 ounces sliced part-skim Mozzarella cheese

4 ounces sliced lean ham

Instructions

1. Preheat oven to 350ºF.

2. In large bowl, combine meat, egg white, tomato juice, salt, pepper, garlic, oregano, and basil.

3. In small skillet coated with nonstick cooking spray, sauté onion until tender. Add cooked onion to the meat mixture, mixing well. Put half the meat mixture into a 9 x 5 x 3-inch loaf pan, top with the Mozzarella cheese and ham, and cover with the remaining meat mixture.

4. Bake for 1 hour, or until meat is done. Serve.

Quick Tip
