Layered Sun-dried Tomato Pine Nut and Spinach Spread
Layers of pine nuts, feta cream cheese, sun dried tomatoes, and spinach create a spectacular but easy layered dip. Follow these directions, and you will have a guaranteed perfect loaf every time that will be a your new favorite.

Ingredients
2 (8-ounce) packages reduced fat cream cheese 1 (8-ounce) package feta cheese, drained of liquid 1 teaspoon minced garlic Salt and pepper to taste 1 teaspoon hot sauce 1/4 cup pine nuts, toasted 1/2 cup finely chopped fresh parsley 1/2 cup sliced green onions 2/3 cup chopped sun dried tomatoes, not oil packed 1 cup finely chopped fresh spinach |
Instructions
Line an 8 ½ x 4 ½ x 2 ½-inch Teflon non-stick loaf pan with plastic wrap. Coat with nonstick cooking spray. In mixer, beat together the cream cheese, feta, garlic, salt and pepper and hot sauce until creamy, set aside. Pour 1 cup boiling water over the sun dried tomatoes and let sit for 10 minutes to reconstitute. On the bottom of the loaf pan, cover the bottom with pine nuts; next layer the parsley, and then green onions. Carefully spread with one third of the cream cheese mixture to cover the green onions keeping the layers intact. Drain the water from the tomatoes and spread the tomatoes over the cream cheese layer. Next, carefully spread one-third of the cream cheese mixture over the tomatoes being careful not to mix. Next, evenly cover the cream cheese with the chopped spinach. Carefully spread the remaining one-third cream cheese on top to cover spinach, do not mix. Cover and refrigerate until ready to serve. To serve, place pan upside down on a serving plate and carefully remove plastic wrap.
Makes 15 to 20 servings.
